15 quail eggs, boiled and peeled
1 onion, sliced

Some chopped celery and spring onions
Water as needed
1 chicken stock cube (or chicken broth)
Salt and white pepper to taste
Olive oil or cooking oil for sautéing (preferably avoid unhealthy oils)
Instructions:
Sauté Aromatics: Heat oil in a pot, then sauté the onion, garlic, ginger, and lemongrass until fragrant.
Add Water: Pour in enough water to cover the ingredients and bring it to a boil.
Dissolve Stock: Add the chicken stock cube and stir until it dissolves. If using chicken broth, you may reduce the amount of water slightly.
Simmer Soup: Add the quail eggs and sliced carrots. Let the soup simmer until all ingredients are tender.
Season: Season with salt and white pepper to taste.
Add Greens: Finally, add the chopped celery and spring onions. Stir for a few seconds and then turn off the heat.
Optional Heat: To add some heat, feel free to include chili to taste.
