1 can (15 oz) pumpkin puree
2/3 cup granulated sweetener (erythritol)
2 large eggs
1/2 cup heavy cream
1 tablespoon pumpkin pie spice
1 teaspoon vanilla extract
Preheat Oven:
Preheat your oven to 350°F (175°C).
Prepare Pie Filling:
In a large bowl, whisk together the pumpkin puree, granulated sweetener, eggs, heavy cream, pumpkin pie spice, and vanilla extract until the mixture is smooth and well combined.
Pour and Bake:
Pour the mixture into a greased 9-inch pie dish.
Bake for about 40 minutes, or until the pie is set and a knife inserted in the center comes out clean.
Cool and Serve:
Allow the pie to cool completely on a wire rack.
Refrigerate for at least 2 hours before serving to let it set properly.
